View All Saved Items Rate Print Share Trending Videos Add Photo Prep Time: 15 mins Cook Time: 25 mins Total Time: 40 mins Servings: 4 Jump to Nutrition Facts Ingredients 2 tablespoons grapeseed oil 1/2 yellow onion, chopped 1 carrot, cut into matchsticks 1 tablespoon chopped fresh ginger 1 tablespoon chopped fresh lemongrass or lemongrass powder 1 tablespoon chopped fresh garlic 4 to 6 fresh collard green leaves, chopped 6 cups vegetable broth 1/3 cup soy sauce 1/3 cup fish sauce 2 packages ramen, seasoning packet discarded 1 pound raw shrimp, peeled and deveined 1/2 cup sliced mushrooms salt and freshly ground black pepper to taste Directions Heat oil in a Dutch oven over medium heat; add onions, carrots, ginger, lemongrass, and garlic, and sauté for 3 to 5 minutes. Stir in chopped collard greens and sauté for 3 to 5 minutes. Add vegetable broth, soy sauce and fish sauce. Bring to a simmer over medium heat, and cook for 10 to 12 minutes. Add ramen noodles, and cook for 3 minutes. Remove from heat, add shrimp and mushrooms, and cover. Allow the heat from the broth to cook shrimp until pink and opaque, 5 to 7 minutes. Season with salt and pepper.
